Also known as Thalassery pepper, Tellicherry TGSEB (Tellicherry Garbled Special Extra Bold) denotes the finest berries, hand-sorted according to a strict grade. Like its close cousin, Malabar MG1 pepper, it belongs to one of the oldest cultivated pepper varieties and is among the most renowned in the world.
This pepper grows on vines that can reach up to ten meters high. It is sometimes nicknamed "late-harvest pepper," because the berries are left on the vine longer, until an advanced stage of ripeness when they begin to redden. This prolonged ripening allows the berries to fill with essential oils, increase in size, and develop a particularly rich aromatic profile.
Tellicherry berries are exceptionally large. On the nose, it offers spicy and woody notes, both deep and delicate. On the palate, the attack is powerful: you discover intense, slightly tangy vegetal aromas and an incredible length of flavor.
Usage advice:
Very versatile, this pepper can be used in most of your dishes. To fully enjoy its powerful aromas, it is recommended to grind it just before serving.
It will perfectly enhance red meats, white meats, and game. It will also enliven a white fish cooked en papillote or grilled, as well as seared tuna. It will add a woody touch to a marinade for prawns or to mussels marinière.
Its complex aromas and subtle heat will elevate a risotto or a cream-based dish, especially if accompanied by mushrooms.
Finally, it will surprise your guests in dessert, paired with red or exotic fruits.
