Salers Gentiane is a French liqueur made from the roots of the Gentiana lutea (yellow gentian) plant, specifically those found on the volcanic slopes of Puy Mary near the village of Salers in the Massif Central. It's known for its bitter, earthy, and slightly floral flavor profile.
It's made using a recipe developed by Alfred Labounoux, which involves uprooting, washing, and crushing the gentian roots, followed by maceration and distillation. The liqueur is aged in oak barrels for several years.
Salers Gentiane is characterized by its pure, firm, and rustic earthy taste, with notes of soil, wood, and subtle citrus and floral hints.
