Description:
This pepper is grown in the mountainous Mondulkiri region in eastern Cambodia; it has a cool climate and exceptional biodiversity, making it an ideal place to cultivate pepper.
Mondulkiri red pepper is harvested fully ripe by hand between March and April. The red, mature berries are then sorted, washed, blanched and sun-dried for several days.
It displays an orange and reddish-brown hue. This pepper is distinguished by its smooth, indulgent notes evoking sun-dried tomato and candied citrus zest.
Usage recommendations:
This pepper pairs perfectly with oily fish, white meat, carpaccio, tartare or risotto. It is ideal on potato, sweet potato, carrot, zucchini, fresh cheese or in sweet-and-savoury dishes.
In a sweet context, try it with fruit salad, a sorbet or vanilla ice cream to accompany a tarte Tatin.
