This salt of exceptional purity is a rock salt, from mines, unlike sea salt from salt pans. It is extracted from one of the oldest salt mines in the world, nestled in the rocky mountains of Semnan province in Iran. Its formation dates back more than 100 million years, in a sea that has now disappeared. Even today, it is hand-harvested using artisanal methods passed down for centuries.

Nicknamed "Iran's blue gold," this rare and precious salt is highly sought after. Its richness in potassium and trace elements gives it not only benefits but also a unique appearance: splendid blue hues, due to the presence of sylvinite in the mine's minerals. This bluish tint remains extremely rare, representing only a tiny fraction of the crystals extracted.

On the palate, its salinity is clear but balanced: bright and brief, giving way to a subtle slightly lemony note. Crispy, delicate and refined, this exceptional salt elevates both the simplest and the most elaborate dishes.

Usage advice:

Ideal for use in a mill, this salt reveals all its finesse as a finishing touch. Versatile, it pairs wonderfully with seafood, from shellfish to fish. It also goes perfectly with eggs, many vegetables — in salads as well as roasted — and with grilled meats or carpaccio.

It also enhances refined dishes such as foie gras or scallops. More surprisingly, it finds its place in desserts, where it magnifies a chocolate mousse, salted butter caramel or even vanilla ice cream.
