The harvesting of this salt began more than 1,300 years ago according to some 7th-century writings from local monks. The salt marshes were built by these same monks; the harvested salt, very valuable, was used to preserve food but also served as a form of tax. In the Middle Ages, numerous ships chartered from Northern Europe came to resupply at Noirmoutier. The method of harvesting has never changed, and today’s salt workers continue to preserve and pass on this ancestral know‑how.
This salt is characterized by its crunchy texture and a fairly pronounced iodized note.
Usage tips:
It is a moist salt that works only with a WET salt mill (ceramic mechanism). To use it correctly, slightly unscrew the screw above the mill to widen the mechanism. We recommend using it as a finishing salt or at the very end of cooking.
It is particularly showcased on meat grilled over a barbecue. It will season shellfish, mollusks and cephalopods perfectly.
It loves sautéed vegetables, salads and even roasted vegetables, raw vegetables and creamy soups. It pairs very well with potatoes, sweet potatoes and tomatoes.
It will enhance a fresh cheese with a drizzle of olive oil, an eggplant caviar, sun‑dried tomato or an onion confit.
It works very well in desserts with chocolate or for making a caramel or a praline.
