Description:
This fossil salt has been sheltered for several million years beneath a layer of volcanic rock, protected from any environmental pollution, on the Andean plateaus.
It is still hand-harvested by miners, as the Incas did.
This salt, reminiscent of rose quartz, owes its color to a high iron content. It contains many minerals such as calcium, potassium and magnesium. It has a rather strong, direct and pronounced salinity.
Usage tips:
This salt is perfect for use with a salt grinder, preferably as a finishing salt.
It is an all-purpose salt that wonderfully enhances red meat and grilled fish. It adds dimension to vegetables, seafood and starches.
It perfectly elevates raw vegetables such as cherry tomatoes, radishes and cucumbers.
For dessert, it will highlight dark chocolate, a praline, caramel or vanilla ice cream.
